Ingredients

  • ½ cup whole wheat or whole wheat pastry flour
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon coarse salt
  • cup granulated sugar
  • ¼ cup oil
  • 1 large egg
  • 1 ½ teaspoons pure vanilla extract
  • ¼ teaspoon pure almond extract (optional)
  • ¼ cup plain or vanilla Greek yogurt
  • ¼ cup milk
  • ¼ cup mini dark or semisweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees and line a 24-cup mini muffin tin with liners.
  2. In one bowl, whisk together the flours, baking powder, and salt.
  3. In another bowl, whisk the sugar, oil, and egg until fluffy and pale.
  4. Add the vanilla, almond extract (if using), yogurt, and milk to the wet ingredients and mix well.
  5. Combine the wet and dry ingredients, folding until just mixed, then gently fold in the chocolate chips.
  6. Scoop the batter into the muffin tin and bake for 9-13 minutes until set.
  7. Let the muffins cool before serving.
