Instructions
- Preheat the oven to 375°F and line a muffin tin with 10 liners.
- Blend the apple sauce (or mashed banana), maple syrup, egg, almond milk, vanilla extract, coconut sugar, and peanut butter until smooth.
- In a separate bowl, mix the gluten-free baking flour, cacao powder, baking soda, and salt.
- Combine the blended mixture with the dry ingredients and mix until just combined, then fold in the chocolate chips.
- Scoop the batter into the muffin liners, filling each one.
- Sprinkle white chocolate on top if using.
- Bake for 17-18 minutes, then remove from the oven.
