Instructions
- Preheat the oven to 375°F.
- Grease a 9×9 baking dish with cooking spray or coconut oil.
- In a large bowl, mix together mashed banana, almond milk, egg white, maple syrup, and vanilla extract.
- Add rolled oats, cinnamon, nutmeg, baking powder, and salt to the mixture and combine well.
- In a small bowl, toss blueberries with gluten free flour to coat them.
- Gently mix the coated blueberries into the oatmeal batter.
- Pour the mixture into the prepared baking dish.
- Bake for 35-40 minutes until golden brown and set.
