Ingredients

The base

  • 2 cups rolled oats
  • 2 bananas mashed
  • 2 cups unsweetened almond milk
  • ¼ cup egg white
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

The dry ingredients

  • teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon gluten free flour

Instructions

  1. Preheat the oven to 375°F.
  2. Grease a 9×9 baking dish with cooking spray or coconut oil.
  3. In a large bowl, mix together mashed banana, almond milk, egg white, maple syrup, and vanilla extract.
  4. Add rolled oats, cinnamon, nutmeg, baking powder, and salt to the mixture and combine well.
  5. In a small bowl, toss blueberries with gluten free flour to coat them.
  6. Gently mix the coated blueberries into the oatmeal batter.
  7. Pour the mixture into the prepared baking dish.
  8. Bake for 35-40 minutes until golden brown and set.
  9. Let cool before serving.
