Instructions
- 1. Preheat the oven to 375°F and grease an 8x8 pan with nonstick spray, optionally lining it with parchment paper.
- 2. In a small bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt, and stir.
- 3. In a large bowl, mash the bananas until soft, then whisk in the eggs.
- 4. Stir in the almond milk, maple syrup, and vanilla into the banana mixture.
- 5. Add the oat mixture to the wet ingredients and stir to combine.
- 6. If desired, mix in walnuts, chocolate chips, or banana coins.
- 7. Pour the batter into the greased dish and bake for 40-45 minutes until golden brown.
- 8. Let cool before cutting and serve.
