Banana Bread Baked Oatmeal

Ingredients

  • 4 Tablespoons Melted Butter or melted coconut oil
  • 4 Ripe Bananas divided
  • 2 Eggs
  • cup Brown Sugar or real maple syrup
  • 1 ½ teaspoons Baking Powder
  • ½ teaspoon Salt
  • 2 teaspoons Cinnamon
  • ½ teaspoon Nutmeg
  • 1 ½ teaspoons Vanilla
  • 1 ½ cups Milk or almond milk
  • 2 ½ cups Old Fashioned Oats
  • ½ cup Chopped Pecans or walnuts
  • ¼ cup Pecan Halves or walnuts

Instructions

  1. Preheat the oven to 375°F and grease an 8"x8" baking dish.
  2. Melt the butter and set aside.
  3. In a small bowl, mash 3 ½ bananas and reserve the remaining ½ banana.
  4. In a large bowl, whisk the eggs and add the mashed banana.
  5. Stir in the brown sugar, baking powder, salt, cinnamon, nutmeg, and vanilla.
  6. Add the melted butter and stir well.
  7. Mix in the milk, followed by the oats and chopped pecans.
  8. Pour the mixture into the prepared baking dish.
  9. Slice the reserved banana and arrange the slices on top.
  10. Add the pecan halves on top as desired.
  11. Bake for 25 to 35 minutes until the center is set.
  12. Let cool in the pan, then cut into portions and serve.
