Gingerbread Baked Quinoa and Oatmeal

Ingredients

  • 2 cups almond milk
  • 1 medium ripe banana
  • 2 tbsp blackstrap molasses
  • 5 large Medjool dates, pitted
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ cup uncooked quinoa, rinsed
  • ½ cup uncooked steel cut oatmeal
  • ¼ cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 375°F and grease an 8x8 inch baking dish.
  2. Blend the almond milk, banana, molasses, dates, flaxseed, vanilla, ginger, cinnamon, salt, cloves, and nutmeg until smooth.
  3. Mix the blended ingredients with the uncooked quinoa and steel cut oatmeal in a bowl, and stir in the chocolate chips.
  4. Pour the mixture into the baking dish and bake for one hour.
  5. Allow to cool on a wire rack for 30-45 minutes before slicing and serving, optionally topped with whipped cream and chocolate chips.
