Ingredients

Breakfast Quinoa

  • 2 tablespoons chopped raw pecans
  • 1 ½ teaspoons coconut oil
  • ½ teaspoon ground cinnamon
  • 1 cup pre-cooked quinoa
  • 1 tablespoon maple syrup
  • a tiny pinch salt

Toppings and Optional Accompaniments

  • 1 tablespoon chopped dried cherries or dried cranberries
  • hemp seeds, chia seeds or flax seeds (optional)
  • milk or yogurt of choice (optional)

Instructions

  1. Toast the pecans in a saucepan over medium heat until fragrant.
  2. Add coconut oil, cinnamon, and salt to the pan and cook until fragrant.
  3. Stir in the quinoa and heat through for about a minute.
  4. Remove from heat and mix in maple syrup.
  5. Transfer to a bowl and add toppings like dried fruit and seeds.
  6. Serve immediately with additional maple syrup and milk or yogurt if desired.
