Cherry Pecan Granola with Quinoa

Ingredients

The base

  • 3 cups old-fashioned oats
  • cup quinoa

The sweeteners and spices

  • ¼ cup pure maple syrup
  • ¼ cup coconut oil, melted
  • ½ tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 pinch sea salt

The mix-ins

  • 1 cup raw pecans, roughly chopped
  • ½ cup dried cherries or cranberries

Instructions

  1. Preheat the oven to 325°F and line a large rimmed baking sheet with parchment paper.
  2. In a small bowl, mix together maple syrup, coconut oil, vanilla, cinnamon, nutmeg, and salt.
  3. In a large bowl, combine oats, quinoa, and pecans.
  4. Pour the maple syrup mixture over the oat and nut mixture and stir to coat evenly.
  5. Spread the granola mixture on the prepared baking sheet and bake for 25 minutes, stirring every 5 minutes.
  6. Once golden brown, remove from the oven and let cool on a rack, stirring occasionally.
  7. When cooled, stir in the dried fruit and transfer to a lidded container for storage.
