Cherry Pecan Granola with Quinoa

Instructions
- Preheat the oven to 325°F and line a large rimmed baking sheet with parchment paper.
- In a small bowl, mix together maple syrup, coconut oil, vanilla, cinnamon, nutmeg, and salt.
- In a large bowl, combine oats, quinoa, and pecans.
- Pour the maple syrup mixture over the oat and nut mixture and stir to coat evenly.
- Spread the granola mixture on the prepared baking sheet and bake for 25 minutes, stirring every 5 minutes.
- Once golden brown, remove from the oven and let cool on a rack, stirring occasionally.
- When cooled, stir in the dried fruit and transfer to a lidded container for storage.
