Ingredients

  • cup maple syrup
  • 2 tablespoons coconut palm sugar
  • cup coconut oil, melted
  • 1 ½ teaspoons vanilla
  • ½ cup pumpkin seeds
  • ½ cup sliced almonds
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup quinoa, soaked for 30 minutes and dried
  • 1 cup oatmeal
  • ½ cup dried cranberries
  • ½ cup tart dried cherries

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a small bowl, mix together the maple syrup, coconut palm sugar, melted coconut oil, and vanilla.
  3. In a large bowl, combine the pumpkin seeds, sliced almonds, salt, cinnamon, quinoa, and oatmeal.
  4. Pour the maple syrup mixture over the dry ingredients and toss to combine.
  5. Spread the mixture in a single layer on the prepared baking sheet.
  6. Bake for 25 minutes, stirring every 10 minutes.
  7. Remove from the oven and let it cool before stirring in the dried cranberries and cherries.
  8. Store the granola in an airtight container.
