Instructions
- Preheat the oven to 300°F and line a 13 x 9 inch pan with parchment paper.
- In a bowl, combine maple syrup, light brown sugar, and sea salt, then whisk in melted coconut oil.
- Process ½ cup of quinoa in a food processor until finely ground and add it to the bowl with the syrup mixture.
- Stir in the remaining quinoa, oats, pecans, pumpkin seeds, sunflower seeds, and coconut until well combined.
- Spread the mixture evenly in the prepared pan and compress it with a spatula.
- Bake for 25 minutes, then rotate the pan and bake for an additional 20 minutes until golden brown.
- Let the bars cool in the pan for 15 minutes before cutting into 16 bars and allow to cool completely.
