Ingredients

The granola base

  • ¾ cup quinoa
  • cups rolled oats
  • 1 cup chopped almonds
  • ½ cup pepitas
  • ½ cup shaved coconut
  • ¼ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

The wet ingredients

  • 1 cup natural applesauce
  • 2 tablespoons honey
  • 1 tablespoon coconut oil (melted)
  • ½ teaspoon vanilla extract

The mix-ins

  • ¼ cup dried cranberries
  • ¼ cup raisins

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Rinse the quinoa under cold water and drain it well.
  3. In a large bowl, mix together the quinoa, oats, almonds, pepitas, shaved coconut, brown sugar, cinnamon, and salt.
  4. In a separate bowl, whisk together the applesauce, honey, coconut oil, and vanilla extract, then combine with the dry ingredients.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 30-40 minutes, stirring every 10 minutes until golden brown.
  7. Once baked, stir in the dried cranberries and raisins.
  8. Allow the granola to cool completely before storing in an airtight container.
