Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- Rinse the quinoa under cold water and drain it well.
- In a large bowl, mix together the quinoa, oats, almonds, pepitas, shaved coconut, brown sugar, cinnamon, and salt.
- In a separate bowl, whisk together the applesauce, honey, coconut oil, and vanilla extract, then combine with the dry ingredients.
- Spread the mixture onto the prepared baking sheet in an even layer.
- Bake for 30-40 minutes, stirring every 10 minutes until golden brown.
- Once baked, stir in the dried cranberries and raisins.
- Allow the granola to cool completely before storing in an airtight container.
