Crunchy Paleo Granola

Ingredients

The granola base

  • 2 cups almonds
  • 1 cup walnuts or pecans
  • ½ cup sunflower seeds
  • ¼ cup flaxseeds
  • ¼ cup chia seeds
  • 2 cups unsweetened coconut flakes

The sweetener and oil

  • ½ cup maple syrup
  • 2 Tbsp maple syrup (extra, optional)
  • ¼ cup coconut oil (melted)

Seasoning

  • ¼ teaspoon sea salt
  • 1 ½ teaspoons pure vanilla extract

Instructions

  1. Preheat the oven to 250º F.
  2. Pulse the almonds in a food processor until chopped uniformly.
  3. Add the remaining nuts and seeds to the food processor and pulse until no large pieces remain.
  4. Transfer the nut-seed mixture to a large bowl and add coconut flakes.
  5. In a small bowl, combine the liquid ingredients and pour over the nut mixture, stirring to coat.
  6. Spread the mixture evenly onto two parchment-lined baking pans in a thin layer.
  7. Bake for 45 minutes, then stir the mixture and swap the rack positions if necessary.
  8. Continue baking for another 30 minutes, stir again, and optionally bake for an additional 15 minutes for extra crunch.
  9. Remove from the oven and let cool.
