Crunchy Paleo Granola

Instructions
- Preheat the oven to 250º F.
- Pulse the almonds in a food processor until chopped uniformly.
- Add the remaining nuts and seeds to the food processor and pulse until no large pieces remain.
- Transfer the nut-seed mixture to a large bowl and add coconut flakes.
- In a small bowl, combine the liquid ingredients and pour over the nut mixture, stirring to coat.
- Spread the mixture evenly onto two parchment-lined baking pans in a thin layer.
- Bake for 45 minutes, then stir the mixture and swap the rack positions if necessary.
- Continue baking for another 30 minutes, stir again, and optionally bake for an additional 15 minutes for extra crunch.
- Remove from the oven and let cool.
