Paleo Granola

Ingredients

  • 2 cups almonds
  • 1 cup macadamia nuts
  • 1 cup pumpkin seeds
  • 1 cup raisins
  • 1 tablespoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ½ teaspoon celtic sea salt

Instructions

  1. Soak nuts and seeds in a large bowl of water overnight.
  2. Soak raisins in a separate bowl with 1 cup of water overnight.
  3. Puree the soaked raisins along with their soaking water in a food processor until smooth.
  4. Drain and rinse the soaked nuts and seeds, discarding the soaking water.
  5. Add the drained nuts and seeds to the raisin puree in the food processor and pulse until the mixture resembles granola.
  6. Pulse in vanilla, cinnamon, and salt to combine.
  7. Spread the mixture onto two large baking sheets.
  8. For live granola, dehydrate in the oven at the lowest setting (usually 135°F) for 24 hours, or bake at 250°F for 45 minutes for instant granola.
  9. Serve as desired, optionally topped with shredded coconut or dried fruit.
