Paleo Granola with Honey and Cinnamon

Instructions
- Preheat the oven to 275 °F.
- In a food processor or blender, chop almonds, cashews, and coconut flakes into small pieces without over blending.
- In a large saucepan, heat coconut oil, honey, cinnamon, and salt over medium-high heat for about 3-5 minutes.
- Remove from heat and stir in vanilla, then add seeds, nuts, and coconut flakes, stirring to coat.
- Spread the granola mixture evenly onto a parchment-lined baking sheet.
- Bake for 20-25 minutes until lightly browned, then add dried cranberries and gently press them into the mixture.
- Allow the granola to cool for about 20 minutes until hardened, then break apart and store in an airtight container for up to 2 weeks.
