Paleo Granola with Honey and Cinnamon

Ingredients

  • 1 cup raw almonds
  • 1 cup raw cashews
  • cup raw pumpkin seeds
  • cup raw sunflower seeds
  • ¼ cup unsweetened coconut flakes
  • ¼ cup virgin coconut oil
  • cup organic honey
  • 1 tsp pure vanilla extract
  • pinch sea salt
  • 2 tsp ground cinnamon
  • ¾ cup dried cranberries or cherries

Instructions

  1. Preheat the oven to 275 °F.
  2. In a food processor or blender, chop almonds, cashews, and coconut flakes into small pieces without over blending.
  3. In a large saucepan, heat coconut oil, honey, cinnamon, and salt over medium-high heat for about 3-5 minutes.
  4. Remove from heat and stir in vanilla, then add seeds, nuts, and coconut flakes, stirring to coat.
  5. Spread the granola mixture evenly onto a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until lightly browned, then add dried cranberries and gently press them into the mixture.
  7. Allow the granola to cool for about 20 minutes until hardened, then break apart and store in an airtight container for up to 2 weeks.
