Paleo Cinnamon Spiced Granola

Ingredients

The nuts and seeds

  • ½ cup raw almonds
  • ½ cup raw pecans
  • ½ cup raw cashews
  • ½ cup raw pepitas (shelled pumpkin seeds)
  • ½ cup unsweetened shredded coconut

The binding ingredients

  • ½ cup almond butter
  • 3 tbsp pure maple syrup
  • 1 tbsp cinnamon
  • sea salt to taste

Optional serving

  • 1 can coconut milk

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a food processor, roughly chop the raw almonds, pecans, and cashews, then transfer them to a mixing bowl.
  3. Add the pepitas and coconut flakes to the bowl and mix well.
  4. In the bowl, combine the almond butter, maple syrup, and cinnamon, mixing until the nuts are well coated.
  5. Spread the mixture evenly on the baking sheet and sprinkle a dash of sea salt on top.
  6. Bake for 15 minutes, then rotate the pan and bake for another 15 minutes or until golden brown.
  7. Allow to cool before breaking it into granola pieces and store in an airtight container.
