Ingredients

The granola base

  • 2 cups Rolled Old Fashioned Oats
  • ½ cup Quinoa
  • cup Pecans
  • cup Pumpkin Seeds (Pepitas)
  • 1 cup Apple Chips (No Sugar Added)

The sweeteners and flavorings

  • cup Maple Syrup (or honey if not Vegan)
  • 2 tbsp Brown Sugar
  • 2 tsp Cinnamon
  • ¼ cup Coconut Oil (melted)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Melt the coconut oil and mix in the brown sugar, cinnamon, and maple syrup.
  3. Spread oats, quinoa, pumpkin seeds, and pecans on a parchment-lined baking sheet, avoiding the apple chips.
  4. Pour the coconut oil mixture over the dry ingredients and toss to coat.
  5. Bake for 10 minutes, then stir and continue baking in 5-minute intervals until golden, about 20-25 minutes total.
  6. Allow the granola to cool completely before stirring in the apple chips.
  7. Store in a mason jar for up to 10 days.
