Instructions
- Preheat the oven to 325°F (163°C).
- Melt the coconut oil and mix in the brown sugar, cinnamon, and maple syrup.
- Spread oats, quinoa, pumpkin seeds, and pecans on a parchment-lined baking sheet, avoiding the apple chips.
- Pour the coconut oil mixture over the dry ingredients and toss to coat.
- Bake for 10 minutes, then stir and continue baking in 5-minute intervals until golden, about 20-25 minutes total.
- Allow the granola to cool completely before stirring in the apple chips.
- Store in a mason jar for up to 10 days.
