Clumpy Apple Cinnamon Granola with Pecans

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Spread the oats on the baking sheet and toast them in the oven for about 15 minutes until fragrant.
- Remove the oats and let them cool slightly, then lower the oven temperature to 300°F.
- In a large bowl, whisk together the coconut oil, maple syrup, almond butter, cinnamon, nutmeg (or allspice), salt, and vanilla extract.
- Add the toasted oats and pecan pieces to the mixture and toss to coat.
- Transfer the granola mixture to the baking sheet, spreading it into an even layer and packing it down.
- Bake for 50 minutes to 1 hour, rotating the baking sheet halfway through.
- Let the granola cool completely on the baking sheet before breaking it up and mixing in the broken apple chips.
