Ingredients

The granola base

  • 5 cups rolled oats
  • cup refined coconut oil, melted
  • cup maple syrup
  • ¼ cup smooth almond butter
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg or allspice
  • ¼ teaspoon fine sea salt
  • ½ teaspoon vanilla extract
  • ¾ cup raw pecan halves

The apple component

  • 2 cups crispy apple chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Spread the oats on the baking sheet and toast them in the oven for about 15 minutes until fragrant.
  3. Remove the oats and let them cool slightly, then lower the oven temperature to 300°F.
  4. In a large bowl, whisk together the coconut oil, maple syrup, almond butter, cinnamon, nutmeg (or allspice), salt, and vanilla extract.
  5. Add the toasted oats and pecan pieces to the mixture and toss to coat.
  6. Transfer the granola mixture to the baking sheet, spreading it into an even layer and packing it down.
  7. Bake for 50 minutes to 1 hour, rotating the baking sheet halfway through.
  8. Let the granola cool completely on the baking sheet before breaking it up and mixing in the broken apple chips.
