Cinnamon Toast Granola

Instructions
- 1. Preheat the oven to 325ºF and line a baking sheet with parchment paper.
- 2. In a large bowl, mix the oats, pecans, cinnamon, ginger, and salt.
- 3. In a smaller bowl, whisk together the maple syrup, almond butter, and vanilla.
- 4. Combine the wet ingredients with the dry ingredients and stir until fully mixed.
- 5. Spread the mixture onto the baking sheet in a flat layer, covering about 3/4 of the sheet.
- 6. Bake for 30-35 minutes or until golden brown.
- 7. Allow the granola to cool completely before breaking it into pieces.
- 8. Toss with the remaining cinnamon and coconut sugar.
- 9. Store in an airtight container.
