Ingredients

The base

  • 3 cups rolled oats
  • 1 cup pecans, roughly chopped
  • 2 tsp cinnamon
  • ½ tsp dried ginger
  • ¼ tsp salt

The sweeteners and binders

  • ½ cup maple syrup
  • cup almond butter (natural, runny)
  • 2 tsp vanilla
  • 1 tsp cinnamon (for tossing)
  • 2 tbsp coconut sugar

Instructions

  1. 1. Preheat the oven to 325ºF and line a baking sheet with parchment paper.
  2. 2. In a large bowl, mix the oats, pecans, cinnamon, ginger, and salt.
  3. 3. In a smaller bowl, whisk together the maple syrup, almond butter, and vanilla.
  4. 4. Combine the wet ingredients with the dry ingredients and stir until fully mixed.
  5. 5. Spread the mixture onto the baking sheet in a flat layer, covering about 3/4 of the sheet.
  6. 6. Bake for 30-35 minutes or until golden brown.
  7. 7. Allow the granola to cool completely before breaking it into pieces.
  8. 8. Toss with the remaining cinnamon and coconut sugar.
  9. 9. Store in an airtight container.
