Ingredients

  • 3 cups Rolled Oats
  • 1 cup Pecans, chopped
  • ½ cup Honey or Maple Syrup
  • ½ cup Brown Sugar
  • ¼ cup Avocado Oil (or Coconut Oil)
  • 1 tsp Kosher Salt
  • cup Pumpkin Puree
  • 2 tsp Cinnamon
  • 2 tsp Maldon Sea Salt (or other large flake sea salt)

Instructions

  1. Mix the oats and chopped pecans in a large bowl.
  2. In a measuring cup, combine brown sugar, honey (or maple syrup), pumpkin puree, cinnamon, and kosher salt.
  3. Pour the pumpkin mixture over the oats and pecans, stirring until everything is coated.
  4. Line a large sheet tray with parchment paper and spread the mixture into a single layer.
  5. Bake at 350°F for 30 minutes, stirring every 10 minutes and monitoring closely to prevent burning.
  6. Once baked, sprinkle large flake sea salt over the top and let it cool on the tray for 1 hour.
  7. Store the cooled granola in a plastic bag or container for up to 1 week.
