Instructions
- Mix the oats and chopped pecans in a large bowl.
- In a measuring cup, combine brown sugar, honey (or maple syrup), pumpkin puree, cinnamon, and kosher salt.
- Pour the pumpkin mixture over the oats and pecans, stirring until everything is coated.
- Line a large sheet tray with parchment paper and spread the mixture into a single layer.
- Bake at 350°F for 30 minutes, stirring every 10 minutes and monitoring closely to prevent burning.
- Once baked, sprinkle large flake sea salt over the top and let it cool on the tray for 1 hour.
- Store the cooled granola in a plastic bag or container for up to 1 week.
