Ingredients

  • ½ cup pumpkin puree
  • teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • cup pure maple syrup
  • 3 tablespoons coconut sugar or light or dark brown sugar
  • 1 teaspoon pure vanilla extract
  • cups old-fashioned rolled oats
  • ¼ cup uncooked millet or quinoa
  • ¼ cup ground flaxseed meal
  • ½ cup pecans
  • ¼ cup pepitas
  • 1 large egg white
  • ½ cup reduced-sugar dried cranberries
  • ¼ cup raisins or golden raisins

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix pumpkin puree, spices, maple syrup, coconut sugar, and vanilla until smooth.
  3. Add oats, millet, and flaxseed to the mixture and stir until coated.
  4. In a small bowl, whisk the egg white until foamy, then pour over the granola mixture and stir to coat.
  5. Spread the mixture on the baking sheet and press down firmly.
  6. Bake for 20 minutes, then flip the granola gently in large pieces and bake for an additional 15-20 minutes until fragrant.
  7. Allow the granola to cool completely on the baking sheet for about 1 hour.
  8. Break into chunks and stir in dried cranberries and raisins before serving.
