Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, mix pumpkin puree, spices, maple syrup, coconut sugar, and vanilla until smooth.
- Add oats, millet, and flaxseed to the mixture and stir until coated.
- In a small bowl, whisk the egg white until foamy, then pour over the granola mixture and stir to coat.
- Spread the mixture on the baking sheet and press down firmly.
- Bake for 20 minutes, then flip the granola gently in large pieces and bake for an additional 15-20 minutes until fragrant.
- Allow the granola to cool completely on the baking sheet for about 1 hour.
- Break into chunks and stir in dried cranberries and raisins before serving.
