Ingredients

The granola base

  • 4 cups old-fashioned rolled oats
  • ¾ cup chopped pecans
  • ½ cup raw pumpkin seeds
  • ½ cup canned pumpkin puree
  • ½ cup pure maple syrup
  • 2 tablespoons avocado oil
  • 1 tablespoon ground cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • a pinch fine salt

The mix-ins

  • ½ cup dried cranberries

Instructions

  1. Preheat the oven to 300℉ and line two large rimmed baking sheets with parchment paper.
  2. In a large bowl, combine the oats, pecans, pumpkin seeds, pumpkin puree, maple syrup, avocado oil, cinnamon, pumpkin pie spice, vanilla, and salt. Stir well to mix.
  3. Spread the granola mixture evenly across the prepared baking sheets.
  4. Bake for 15 minutes, then rotate the pans and bake for an additional 15 minutes, checking after 5 minutes until golden brown and slightly crunchy.
  5. Turn off the oven and leave the granola to cool completely inside with the door cracked open for about 45 minutes.
  6. Once cooled, stir in the dried cranberries.
  7. Store in an airtight container at room temperature for up to two weeks or freeze for longer storage.
