Ingredients

The base

  • 3 cups rolled oats
  • 1.5 cups chopped pecans
  • 1 cup shredded coconut
  • ¼ cup dry quinoa

The seasoning

  • 2 tbsp pumpkin pie spice
  • ½ tsp salt

The binding and flavoring

  • ½ cup maple syrup
  • ½ cup coconut oil

The mix-ins

  • ½ cup dried cranberries

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats, chopped pecans, shredded coconut, dry quinoa, pumpkin pie spice, and salt.
  3. Add the maple syrup and coconut oil to the mixture, stirring until everything is well combined and coated.
  4. Spread the mixture evenly on the baking sheet.
  5. Bake for 40-45 minutes until slightly golden brown.
  6. Let the granola cool completely for at least 20 minutes before breaking it into clusters, then mix in the dried cranberries.
  7. Store in an airtight container for up to 2 weeks.
