Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, mix the rolled oats, chopped pecans, shredded coconut, dry quinoa, pumpkin pie spice, and salt.
- Add the maple syrup and coconut oil to the mixture, stirring until everything is well combined and coated.
- Spread the mixture evenly on the baking sheet.
- Bake for 40-45 minutes until slightly golden brown.
- Let the granola cool completely for at least 20 minutes before breaking it into clusters, then mix in the dried cranberries.
- Store in an airtight container for up to 2 weeks.
