Ingredients

The granola mixture

  • 2 cups old fashioned oats
  • cup raw pecans
  • cup raw pepitas (pumpkin seeds)
  • ¼ cup dried unsweetened cranberries
  • 1 teaspoon pumpkin spice seasoning
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

The wet ingredients

  • 2 tablespoons coconut oil
  • ½ cup maple syrup
  • cup pumpkin puree
  • 1 ½ teaspoons vanilla extract

Instructions

  1. Preheat the oven to 325 degrees.
  2. In a large bowl, mix the oats, pumpkin spice seasoning, ground cinnamon, salt, pecans, and pepitas.
  3. In a small bowl, whisk together the pumpkin puree, coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and toss to coat.
  5. Spread the mixture on a baking sheet lined with a silicon mat or parchment paper.
  6. Bake for 25-30 minutes, turning the granola every 10 minutes to prevent burning.
  7. Remove from the oven and let cool, then toss in the cranberries before serving.
