Instructions
- 1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
- 2. In a large bowl, mix together the oats, spices, and salt.
- 3. In a separate bowl, whisk together the brown sugar, pumpkin puree, applesauce, maple syrup, and vanilla until smooth.
- 4. Combine the wet ingredients with the oat mixture, stirring until the oats are evenly coated.
- 5. Spread the mixture evenly on the prepared baking sheet.
- 6. Bake for 20 minutes, then stir and bake for an additional 15-20 minutes until golden and crisp.
- 7. Remove from the oven and stir in the dried cranberries and pepitas.
- 8. Allow to cool completely before storing in an airtight container.
