Ingredients

The granola base

  • 5 cups old fashioned oats
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¾ teaspoon salt
  • ¾ cup brown sugar
  • ½ cup pumpkin puree
  • ¼ cup applesauce
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract

Add-ins

  • ¾ cup dried cranberries
  • ½ cup pepitas

Instructions

  1. 1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. 2. In a large bowl, mix together the oats, spices, and salt.
  3. 3. In a separate bowl, whisk together the brown sugar, pumpkin puree, applesauce, maple syrup, and vanilla until smooth.
  4. 4. Combine the wet ingredients with the oat mixture, stirring until the oats are evenly coated.
  5. 5. Spread the mixture evenly on the prepared baking sheet.
  6. 6. Bake for 20 minutes, then stir and bake for an additional 15-20 minutes until golden and crisp.
  7. 7. Remove from the oven and stir in the dried cranberries and pepitas.
  8. 8. Allow to cool completely before storing in an airtight container.
