Ingredients

The base

  • 3 cups Bob's Red Mill Gluten Free Old Fashioned Rolled Oats
  • 1 cup chopped walnuts
  • ¼ cup pumpkin seeds
  • 2 teaspoons pumpkin pie spice
  • ¼ cup almond butter
  • ½ cup maple syrup
  • cup pumpkin puree
  • ¾ teaspoon sea salt

Optional ingredients

  • dried fruit, chocolate chips or white chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the oats, walnuts, pumpkin seeds, pumpkin pie spice, and sea salt.
  3. In a separate bowl, combine the almond butter, maple syrup, and pumpkin puree, stirring until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until everything is well coated.
  5. Spread the mixture evenly on the baking sheet, pressing it down to form clusters.
  6. Bake for 25 minutes, stirring halfway through to ensure even toasting.
  7. Remove from the oven and let it cool completely before breaking into clusters.
  8. Store in an airtight container for up to a month.
