Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, pumpkin pie spice, salt, pecans, cranberries, and mini chocolate chips.
- In a medium bowl, whisk together the pumpkin puree, almond butter, coconut oil, honey, and vanilla.
- Add the wet ingredients to the dry ingredients and stir until well combined.
- Press the mixture into a thin layer on the baking sheet and bake for 25-30 minutes until golden brown.
- Allow the granola to cool completely before breaking it into clusters.
