Ingredients

The base

  • 3 cups rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp salt
  • 1 cup chopped pecans
  • ¼ cup dried cranberries
  • ½ cup mini chocolate chips

The wet ingredients

  • ¼ cup pumpkin puree
  • ¼ cup almond butter
  • ¼ cup coconut oil
  • cup honey
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, pumpkin pie spice, salt, pecans, cranberries, and mini chocolate chips.
  3. In a medium bowl, whisk together the pumpkin puree, almond butter, coconut oil, honey, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until well combined.
  5. Press the mixture into a thin layer on the baking sheet and bake for 25-30 minutes until golden brown.
  6. Allow the granola to cool completely before breaking it into clusters.
