Pumpkin Granola

Ingredients

  • 6 cups rolled oats
  • 1 heaping cup sliced almonds
  • 1 heaping cup pistachios (or other nuts)
  • 1 heaping cup unsweetened flaked coconut
  • 1 cup pumpkin puree
  • 1 cup olive oil
  • 1 cup maple syrup
  • 2–3 teaspoons salt
  • 1–2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the dry ingredients (oats, almonds, pistachios, coconut) in a bowl.
  3. Whisk together the wet ingredients (pumpkin, olive oil, maple syrup, salt, cinnamon) in another bowl.
  4. Pour the wet mixture over the dry ingredients and stir to combine.
  5. Spread the mixture onto a nonstick jelly roll pan or cake pan.
  6. Bake for 15 minutes, stir, then bake for another 15 minutes.
  7. Remove from the oven and let it rest to crisp up.
  8. Store in a plastic zip-top bag for about a week and serve as desired.
