Pumpkin Granola

Instructions
- Preheat the oven to 350°F.
- Mix the dry ingredients (oats, almonds, pistachios, coconut) in a bowl.
- Whisk together the wet ingredients (pumpkin, olive oil, maple syrup, salt, cinnamon) in another bowl.
- Pour the wet mixture over the dry ingredients and stir to combine.
- Spread the mixture onto a nonstick jelly roll pan or cake pan.
- Bake for 15 minutes, stir, then bake for another 15 minutes.
- Remove from the oven and let it rest to crisp up.
- Store in a plastic zip-top bag for about a week and serve as desired.
