Ingredients

The granola mixture

  • 3 cups rolled oats
  • cups brown rice crisp cereal
  • 1 cup chopped walnuts
  • ½ tsp cinnamon
  • ¼ tsp ginger

The wet ingredients

  • ½ cup melted coconut oil
  • cup maple syrup
  • ¼ cup pumpkin puree
  • 1 tsp vanilla extract

The dried fruit

  • ½ cup dried cranberries (or raisins)

Instructions

  1. Preheat the oven to 300 degrees.
  2. In a large bowl, mix the oats, rice cereal, walnuts, cinnamon, and ginger.
  3. In a small bowl, combine the coconut oil, maple syrup, pumpkin puree, and vanilla extract.
  4. Pour the liquid mixture over the oat mixture and stir to coat evenly.
  5. Transfer the mixture to a 9x13 inch baking pan.
  6. Bake for about 60 minutes or until set, increasing the temperature to 325 degrees if necessary for an additional 10 minutes.
  7. Allow to cool completely on a wire rack before breaking into pieces and stirring in the dried fruit.
  8. Store in an airtight container.
