Pumpkin Granola

The granola mixture

The wet ingredients

melted coconut oil

maple syrup

pumpkin puree

vanilla extract
The dried fruit

dried cranberries (or raisins)
Instructions
- Preheat the oven to 300 degrees.
- In a large bowl, mix the oats, rice cereal, walnuts, cinnamon, and ginger.
- In a small bowl, combine the coconut oil, maple syrup, pumpkin puree, and vanilla extract.
- Pour the liquid mixture over the oat mixture and stir to coat evenly.
- Transfer the mixture to a 9x13 inch baking pan.
- Bake for about 60 minutes or until set, increasing the temperature to 325 degrees if necessary for an additional 10 minutes.
- Allow to cool completely on a wire rack before breaking into pieces and stirring in the dried fruit.
- Store in an airtight container.
