Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- Mix the oats, pepitas, and pecans in a large bowl.
- In another bowl, whisk together the maple syrup, melted coconut oil, pumpkin puree, pumpkin pie spice, vanilla extract, and salt until smooth.
- Pour the wet mixture over the dry ingredients and mix well.
- Spread the mixture evenly on the baking sheet and bake for 15 minutes.
- Stir in the coconut (if using) and bake for an additional 10-15 minutes until golden.
- Let the granola cool to room temperature before adding chocolate chips (if using).
- Serve immediately or store in a sealed container for up to 2 weeks.
