Ingredients

The base

  • 2 cups old-fashioned oats
  • 1 cup raw pecan halves
  • 1 cup raw pepitas (pumpkin seeds)

The sweeteners and flavors

  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • ¼ cup pumpkin puree
  • teaspoons pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • ½ teaspoon salt

Optional ingredients

  • ½ cup shredded or shaved coconut
  • ½ cup white or semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a baking sheet.
  2. Mix the oats, pepitas, and pecans in a large bowl.
  3. In another bowl, whisk together the maple syrup, melted coconut oil, pumpkin puree, pumpkin pie spice, vanilla extract, and salt until smooth.
  4. Pour the wet mixture over the dry ingredients and mix well.
  5. Spread the mixture evenly on the baking sheet and bake for 15 minutes.
  6. Stir in the coconut (if using) and bake for an additional 10-15 minutes until golden.
  7. Let the granola cool to room temperature before adding chocolate chips (if using).
  8. Serve immediately or store in a sealed container for up to 2 weeks.
