Instructions
- 1. Preheat the oven to 340°F (171°C).
- 2. In a large bowl, mix the oats, nuts, seeds, spices, sugar, and salt.
- 3. In a small saucepan over medium-low heat, warm the coconut oil, maple syrup, and pumpkin puree, then whisk together.
- 4. Pour the warm mixture over the dry ingredients and mix quickly with a wooden spoon.
- 5. Spread the mixture evenly onto two baking sheets and bake for 23-33 minutes, stirring halfway if desired.
- 6. Once golden brown (about 25 minutes), remove from the oven and let cool completely.
- 7. Transfer to an airtight container and store.
