Ingredients

  • 3 cups rolled oats
  • 1 ¼ cups raw pecans
  • cup raw pepitas
  • 3 Tbsp sugar
  • ¼ tsp sea salt
  • ¾ tsp pumpkin pie spice
  • ¼ cup coconut or olive oil
  • cup maple syrup
  • cup pumpkin puree

Instructions

  1. 1. Preheat the oven to 340°F (171°C).
  2. 2. In a large bowl, mix the oats, nuts, seeds, spices, sugar, and salt.
  3. 3. In a small saucepan over medium-low heat, warm the coconut oil, maple syrup, and pumpkin puree, then whisk together.
  4. 4. Pour the warm mixture over the dry ingredients and mix quickly with a wooden spoon.
  5. 5. Spread the mixture evenly onto two baking sheets and bake for 23-33 minutes, stirring halfway if desired.
  6. 6. Once golden brown (about 25 minutes), remove from the oven and let cool completely.
  7. 7. Transfer to an airtight container and store.
