Healthy Gluten Free Banana Bread

Instructions
- Preheat the oven to 350°F.
- Rinse and cook the quinoa according to instructions, then fluff it in a bowl.
- Blend the cooked quinoa, bananas, nut butter, milk, vanilla, and eggs until smooth.
- In a separate bowl, sift together the dry ingredients.
- Combine the dry ingredients with the banana-quinoa mixture until smooth, and stir in chocolate chips if using.
- Pour the batter into a greased or lined 8x4 inch bread pan, topping with additional chocolate chips and sliced banana if desired.
- Bake for 50-55 minutes, covering with foil halfway through to prevent browning.
