Healthy Gluten Free Banana Bread

Ingredients

The base

  • 1 ½ cups quinoa, cooked
  • 3 small bananas
  • 2 tablespoons nut butter of choice, softened
  • 2 tablespoons non dairy milk or milk of choice
  • 1 teaspoon vanilla
  • 2 large eggs
  • ⅓ to ½ cup coconut sugar

The dry ingredients

  • 1 cup oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon sea salt

Optional ingredients

  • ½–⅔ cup chocolate chips (dark chocolate or non dairy)
  • as needed none sliced banana for topping

Instructions

  1. Preheat the oven to 350°F.
  2. Rinse and cook the quinoa according to instructions, then fluff it in a bowl.
  3. Blend the cooked quinoa, bananas, nut butter, milk, vanilla, and eggs until smooth.
  4. In a separate bowl, sift together the dry ingredients.
  5. Combine the dry ingredients with the banana-quinoa mixture until smooth, and stir in chocolate chips if using.
  6. Pour the batter into a greased or lined 8x4 inch bread pan, topping with additional chocolate chips and sliced banana if desired.
  7. Bake for 50-55 minutes, covering with foil halfway through to prevent browning.
