Instructions
- Preheat the oven to 350°F and lightly grease the loaf pans.
- In a large bowl, mix the flours, baking soda, baking powder, and salt.
- Mash the ripe bananas until smooth.
- Melt the coconut oil and mix it with sugar and applesauce in a separate bowl.
- Add the eggs, milk, vanilla, and mashed bananas to the wet mixture and blend well.
- Combine the wet and dry ingredients until just moistened.
- Pour the batter into the prepared pans and add optional toppings if desired.
- Bake for 50 to 55 minutes for large loaves or 30 to 35 minutes for small loaves.
- Allow the bread to cool in the pan for 5 minutes before transferring to a wire rack.
