Ingredients

The bread

  • 2 cups Bob’s Red Mill gluten-free flour
  • 2 cups gluten-free oat flour
  • 8 large very ripe bananas, mashed
  • ¾ cup coconut sugar
  • ½ cup applesauce
  • ½ cup coconut oil, melted
  • 4 large eggs
  • ¼ cup milk of choice
  • 1 tsp vanilla
  • 2 tsp baking powder
  • 2 tsp baking soda

Optional toppings

  • to taste sunflower seeds
  • to taste cocoa nibs
  • to taste shredded coconut
  • to taste chopped Medjool dates

Instructions

  1. Preheat the oven to 350°F and lightly grease the loaf pans.
  2. In a large bowl, mix the flours, baking soda, baking powder, and salt.
  3. Mash the ripe bananas until smooth.
  4. Melt the coconut oil and mix it with sugar and applesauce in a separate bowl.
  5. Add the eggs, milk, vanilla, and mashed bananas to the wet mixture and blend well.
  6. Combine the wet and dry ingredients until just moistened.
  7. Pour the batter into the prepared pans and add optional toppings if desired.
  8. Bake for 50 to 55 minutes for large loaves or 30 to 35 minutes for small loaves.
  9. Allow the bread to cool in the pan for 5 minutes before transferring to a wire rack.
