Instructions
- Preheat the oven to 350°F and line a 9x5-inch loaf pan with parchment paper, greasing the sides.
- In a large bowl, whisk together the mashed bananas, sugar, oil, almond milk, eggs, and vanilla until smooth.
- In a separate bowl, mix the gluten-free flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Combine the dry ingredients with the wet ingredients and stir until just combined, then gently fold in the walnuts.
- Pour the batter into the prepared loaf pan, sprinkle with additional walnuts and oats, and bake for 42 to 48 minutes until a toothpick comes out mostly clean.
