Ingredients

  • 2 pieces very ripe bananas, mashed
  • ½ cup coconut sugar or regular sugar
  • cup extra-virgin olive oil
  • ¼ cup almond milk
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • cups Bob’s Red Mill Gluten Free All-Purpose Baking Flour
  • ½ cup almond flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup chopped walnuts
  • 2 tablespoons chopped walnuts for topping
  • tablespoons rolled oats for topping

Instructions

  1. Preheat the oven to 350°F and line a 9x5-inch loaf pan with parchment paper, greasing the sides.
  2. In a large bowl, whisk together the mashed bananas, sugar, oil, almond milk, eggs, and vanilla until smooth.
  3. In a separate bowl, mix the gluten-free flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Combine the dry ingredients with the wet ingredients and stir until just combined, then gently fold in the walnuts.
  5. Pour the batter into the prepared loaf pan, sprinkle with additional walnuts and oats, and bake for 42 to 48 minutes until a toothpick comes out mostly clean.
