Ingredients

  • ¼ cup melted coconut oil or extra-virgin olive oil or high-quality vegetable oil
  • ½ cup honey or maple syrup
  • 4 large eggs
  • 1 cup mashed ripe bananas (about 2 ½ medium or 2 large bananas)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • 2 ½ cups almond flour

Instructions

  1. 1. Preheat the oven to 325°F and prepare the loaf pan by greasing and flouring it.
  2. 2. In a mixing bowl, combine the oil and honey, whisking until blended.
  3. 3. Add the eggs and whisk until thoroughly combined.
  4. 4. Mix in the mashed bananas, baking powder, vanilla, baking soda, cinnamon, and salt.
  5. 5. Stir in the almond flour until fully incorporated.
  6. 6. Pour the batter into the prepared loaf pan.
  7. 7. Bake for 55 to 65 minutes until the center is springy and a toothpick comes out clean.
  8. 8. Cool in the pan for at least 30 minutes before removing and slicing.
