Gluten Free Banana Bread

Instructions
- 1. Preheat the oven to 350°F and spray a loaf pan with cooking spray.
- 2. In a large mixing bowl, mash the bananas with a fork or potato masher.
- 3. Add the eggs, maple syrup, oil, and vanilla to the mashed bananas and whisk until well combined.
- 4. Add the almond flour, oat flour, baking soda, baking powder, and salt to the mixture and mix until just incorporated.
- 5. Fold in the chocolate chips, then pour the mixture into the prepared loaf pan.
- 6. Top with additional chocolate chips if desired and bake for about 60 minutes or until a knife comes out almost clean.
- 7. Allow the bread to cool in the pan for at least 30 minutes before transferring to a wire rack to cool completely.
