Gluten Free Banana Bread

Ingredients

  • 3 medium very over-ripe bananas
  • 2 large eggs
  • cup pure maple syrup
  • ¼ cup oil (avocado oil recommended)
  • 1 tsp vanilla extract
  • 1 ¼ cups packed almond flour
  • 1 ¼ cups certified GF oat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • ½ cup chocolate chips, plus more for topping

Instructions

  1. 1. Preheat the oven to 350°F and spray a loaf pan with cooking spray.
  2. 2. In a large mixing bowl, mash the bananas with a fork or potato masher.
  3. 3. Add the eggs, maple syrup, oil, and vanilla to the mashed bananas and whisk until well combined.
  4. 4. Add the almond flour, oat flour, baking soda, baking powder, and salt to the mixture and mix until just incorporated.
  5. 5. Fold in the chocolate chips, then pour the mixture into the prepared loaf pan.
  6. 6. Top with additional chocolate chips if desired and bake for about 60 minutes or until a knife comes out almost clean.
  7. 7. Allow the bread to cool in the pan for at least 30 minutes before transferring to a wire rack to cool completely.
