Instructions
- Preheat the oven to 350°F and line a 9x5 bread pan with parchment paper.
- In a large bowl, mash the bananas and mix in the eggs.
- In a separate cup, whisk together the maple syrup, melted butter, and vanilla, then combine with the banana mixture.
- In another bowl, combine the almond flour, oat flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the cocoa powder, mixing gently.
- If using, fold in the chocolate chips.
- Pour the batter into the prepared pan and add any optional toppings.
- Bake for 45 to 55 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
