Ingredients

The bread

  • 3 medium-sized ripe bananas
  • 3 large eggs
  • cup maple syrup
  • ¼ cup melted vegan butter or refined coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 ⅓ to 2 ½ cups fine blanched almond flour
  • ½ to ⅔ cup gluten free oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • ¼ cup unsweetened cocoa powder
  • ¼ cup dark chocolate chips (optional)

Optional toppings

  • to taste sliced bananas
  • to taste chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a 9x5 bread pan with parchment paper.
  2. In a large bowl, mash the bananas and mix in the eggs.
  3. In a separate cup, whisk together the maple syrup, melted butter, and vanilla, then combine with the banana mixture.
  4. In another bowl, combine the almond flour, oat flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the cocoa powder, mixing gently.
  6. If using, fold in the chocolate chips.
  7. Pour the batter into the prepared pan and add any optional toppings.
  8. Bake for 45 to 55 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
