Ingredients

The batter

  • 3 medium bananas
  • 1 2/3 cups oat flour
  • 1/3 cup almond butter
  • 1/3 cup coconut sugar
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

The leavening agents

  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda

The flax egg

  • 2 tablespoons flax meal
  • 5 tablespoons water

Mix-ins

  • 3/4 cup chocolate chips or nuts

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan with parchment paper or nonstick spray.
  2. Make the flax egg by mixing flax meal with water and letting it sit for ten minutes.
  3. Mash the bananas in a large bowl.
  4. Stir in almond butter, coconut sugar, coconut oil, vanilla extract, and apple cider vinegar into the mashed bananas.
  5. In a separate bowl, combine oat flour, baking powder, baking soda, cinnamon, and salt.
  6. Add the dry ingredients to the wet ingredients and mix until combined.
  7. Stir in the flax egg and any desired mix-ins like chocolate chips.
  8. Pour the batter into the prepared loaf pan and top with additional mix-ins if desired.
  9. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
