Ingredients

Wet Ingredients

  • 1 batch flax egg
  • 3 medium ripe bananas
  • ¼ cup unsalted almond butter
  • 3 Tbsp avocado oil
  • 2-3 Tbsp maple syrup
  • ¾ cup unsweetened almond milk

Dry Ingredients

  • ½ cup coconut sugar
  • ½ tsp sea salt
  • 1 Tbsp baking powder
  • 1 ¾ cup almond meal
  • 1 ¼ cup gluten-free flour blend
  • 1 ⅓ cup gluten-free oats
  • ½ cup chopped raw walnuts

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a loaf pan.
  2. Make the flax egg and let it rest for 5 minutes.
  3. Mash the ripe bananas in a mixing bowl until smooth.
  4. Add the almond butter, avocado oil, coconut sugar, maple syrup, sea salt, and almond milk to the bowl and whisk together.
  5. Stir in the baking powder, almond meal, gluten-free flour blend, and gluten-free oats until well combined.
  6. Fold in half of the walnuts and pour the batter into the prepared pan, smoothing the top.
  7. Sprinkle the remaining walnuts on top.
  8. Bake for 1 hour to 1 hour 15 minutes, until firm and golden brown.
  9. Let the bread rest for 10 minutes in the pan, then transfer to a cooling rack.
  10. Allow to cool completely before slicing.
