Ingredients

The dry ingredients

  • 1 cup oat flour
  • ¾ cup almond flour
  • ¾ cup cane sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • ¼ teaspoon ground cloves

The wet ingredients

  • 1 cup mashed bananas
  • ¼ cup cashew milk or lite coconut milk
  • 3 tablespoons unsweetened apple sauce
  • 2 tablespoons apple cider vinegar

Optional ingredients

  • ½ cup chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the dry ingredients in a bowl and whisk to remove clumps.
  3. Add the mashed bananas, milk, apple sauce, and vinegar to the dry mixture and stir to form a thick batter.
  4. If using nuts, fold them into the batter.
  5. Pour the batter into a prepared loaf pan and add sliced bananas on top if desired.
  6. Bake for 45-50 minutes, until a toothpick comes out dry with crumbs.
  7. Allow the bread to cool completely before slicing.
