Ingredients

Wet Ingredients

  • 4 large over-ripe bananas
  • ¾ cup almond milk
  • ½ cup coconut oil, melted
  • ½ cup date paste
  • 1 tbsp pure vanilla extract

Dry Ingredients

  • 2 cups organic whole wheat pastry flour
  • 2 tbsp ground flaxseed
  • 1 tbsp ground cinnamon
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ¾ tsp salt

Add-Ins

  • 1 cup chopped walnuts
  • 1 cup chopped dates

Optional Topping

  • 5-6 pieces pitted dates, chopped
  • 3-4 tbsp chopped walnuts

Instructions

  1. Preheat the oven to 350°F and grease a one pound loaf pan.
  2. In a large bowl, combine the ripe bananas, almond milk, melted coconut oil, date paste, and vanilla extract. Mash and mix until well combined.
  3. In a separate bowl, whisk together the flour, ground flaxseed, cinnamon, baking powder, baking soda, and salt. Add this to the wet ingredients and stir until just combined.
  4. Fold in the chopped dates and walnuts, then transfer the batter to the prepared loaf pan.
  5. Bake for 65-70 minutes, or until a toothpick comes out clean.
  6. Let the bread cool in the pan for about 30 minutes, then remove it from the pan and slice to serve.
