Ingredients

  • 3 pieces very ripe bananas (fresh or thawed from frozen)
  • 2 ½ cups almond meal/flour
  • ½ cup arrowroot starch
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 350ºF and line a loaf pan with parchment paper.
  2. Mash the bananas in a large bowl until you have a little over 1 cup of mashed banana.
  3. Add the almond meal, arrowroot starch, coconut sugar, baking soda, salt, vanilla, and cinnamon to the mashed bananas and stir until smooth.
  4. Stir in the apple cider vinegar last, then pour the batter into the lined pan and smooth the top.
  5. Bake for about 45 minutes until the top has risen and feels firm to the touch.
  6. Allow the loaf to cool completely before cutting.
