Instructions
- Preheat the oven to 350°F and grease an 8x4 bread pan.
- In a small bowl, mix the oats, flour, cinnamon, baking soda, baking powder, and salt.
- In a large bowl, mash the bananas well, then stir in the coconut oil, maple syrup, and vanilla.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Fold in the chocolate chips and optional walnuts.
- Pour the batter into the greased bread pan and top with more chocolate chips.
- Bake for 40-50 minutes, covering with foil if it gets too brown.
