Vegan Banana Bread

Ingredients

  • 1 cup quick oats
  • 1 cup gluten free 1-1 baking flour
  • ½ tsp cinnamon
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1⅓ cups mashed banana
  • cup melted coconut oil
  • cup maple syrup
  • 2 tsps vanilla
  • ¾ cup chocolate chips
  • ¾ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and grease an 8x4 bread pan.
  2. In a small bowl, mix the oats, flour, cinnamon, baking soda, baking powder, and salt.
  3. In a large bowl, mash the bananas well, then stir in the coconut oil, maple syrup, and vanilla.
  4. Add the dry ingredients to the wet ingredients and stir until combined.
  5. Fold in the chocolate chips and optional walnuts.
  6. Pour the batter into the greased bread pan and top with more chocolate chips.
  7. Bake for 40-50 minutes, covering with foil if it gets too brown.
