Ingredients

Wet Ingredients

  • 1 cup brown sugar
  • ½ cup oil, melted
  • 2 flax eggs flax meal + water
  • 1 cup mashed bananas
  • ¼ cup vegan milk
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¾ teaspoon sea salt
  • 1 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare a loaf pan.
  2. In a large mixing bowl, combine flax eggs, sugar, and melted oil, mixing until incorporated.
  3. Add mashed bananas, vegan milk, and vanilla, whisking until fully combined.
  4. Sift in flour, cocoa powder, baking powder, and sea salt, mixing until just incorporated.
  5. Fold in chocolate chips if desired, then pour the batter into the prepared loaf pan.
  6. Top with additional chocolate chips and bake for 60 minutes.
  7. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
