  • ¾ cup mashed bananas
  • ¼ cup non-dairy milk
  • 2 teaspoons vanilla extract

Dry Ingredients

  • cups all-purpose flour
  • 2 teaspoons baking powder
  • ¾ teaspoon sea salt
  • optional cinnamon
  • ½ cup chocolate chips
  • ½ cup nuts

Instructions

  1. Preheat the oven to 350°F and prepare a 9x5 loaf pan with cooking spray.
  2. In a mixing bowl, whisk together the flax eggs, sugar, and melted coconut oil for 3 minutes.
  3. Add the mashed bananas, non-dairy milk, and vanilla extract, whisking for another minute.
  4. Incorporate the flour, baking powder, cinnamon, and sea salt, mixing until just combined.
  5. If using, fold in the chocolate chips or nuts.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60 minutes, tenting with foil for the last 20 minutes to prevent burning.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
