Ingredients

Dry Ingredients

  • cups white whole wheat flour
  • ¾ cup coconut sugar
  • 2 teaspoons baking soda
  • teaspoon salt
  • 1 teaspoon ground cinnamon
  • cup chopped walnuts

Wet Ingredients

  • 1 unit flax egg (1 tablespoon ground flaxseed + 3 tablespoons warm water)
  • 3 medium ripe bananas, mashed
  • ¼ cup maple syrup
  • ½ cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and prepare a 9-inch loaf pan with nonstick spray.
  2. Prepare the flax egg by mixing ground flaxseed with warm water and letting it thicken for 15 minutes.
  3. In a medium bowl, combine all dry ingredients except walnuts.
  4. In a large bowl, mash the bananas and then add the flax egg and other wet ingredients, mixing until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the melted coconut oil.
  7. Pour the batter into the prepared loaf pan and sprinkle walnuts on top.
  8. Bake for 45-50 minutes, covering with foil if the top browns too quickly.
  9. Let the bread cool for 15 minutes before removing from the pan to cool completely.
