Instructions
- Preheat the oven to 350ºF and prepare a 9-inch loaf pan with nonstick spray.
- Prepare the flax egg by mixing ground flaxseed with warm water and letting it thicken for 15 minutes.
- In a medium bowl, combine all dry ingredients except walnuts.
- In a large bowl, mash the bananas and then add the flax egg and other wet ingredients, mixing until combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Stir in the melted coconut oil.
- Pour the batter into the prepared loaf pan and sprinkle walnuts on top.
- Bake for 45-50 minutes, covering with foil if the top browns too quickly.
- Let the bread cool for 15 minutes before removing from the pan to cool completely.
