One Bowl Vegan Chocolate Chip Banana Bread

Instructions
- 1. Mix the ground flax with water and let it thicken for 2-3 minutes.
- 2. In a bowl, combine the bananas, sugars, coconut oil, and vanilla extract.
- 3. Add the ground flax mixture to the banana mixture.
- 4. Gradually mix in the flour, baking powder, and baking soda, adding flour ½ cup at a time.
- 5. Fold in the chocolate chips.
- 6. Spray a 9x5 inch loaf pan with cooking spray.
- 7. Bake at 350°F for 40-45 minutes or until a toothpick comes out clean.
- 8. Allow to cool on a rack for 5 minutes, then turn the loaf out and let it cool for another 15 minutes before cutting.
