Ingredients

  • 3 pieces Ripe Bananas
  • ½ cup Coconut Oil, melted
  • 1 tsp Vanilla Extract
  • 2 tbsp Ground Flax Seed
  • 6 tbsp Water
  • pinch Salt
  • ½ cup Brown Sugar
  • ½ cup White Sugar
  • 2 ¼ cups Flour
  • 1 ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ cup Mini Dark Vegan Chocolate chips

Instructions

  1. 1. Mix the ground flax with water and let it thicken for 2-3 minutes.
  2. 2. In a bowl, combine the bananas, sugars, coconut oil, and vanilla extract.
  3. 3. Add the ground flax mixture to the banana mixture.
  4. 4. Gradually mix in the flour, baking powder, and baking soda, adding flour ½ cup at a time.
  5. 5. Fold in the chocolate chips.
  6. 6. Spray a 9x5 inch loaf pan with cooking spray.
  7. 7. Bake at 350°F for 40-45 minutes or until a toothpick comes out clean.
  8. 8. Allow to cool on a rack for 5 minutes, then turn the loaf out and let it cool for another 15 minutes before cutting.
