Ingredients

  • 1 ½ cups mashed ripe bananas (~3 bananas)
  • cup melted coconut oil or melted butter
  • ¾ cup dark muscovado or dark brown sugar
  • ¼ cup full-fat coconut milk or yogurt or sour cream
  • 2 large eggs (lightly beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • ¾ teaspoon baking soda
  • ½ teaspoon fine grain sea salt

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. In a large bowl, mash the ripe bananas and mix in the melted coconut oil.
  3. Stir in the brown sugar and coconut milk, then add the eggs and vanilla, mixing until combined.
  4. Add the all-purpose and whole wheat flours, baking soda, and salt, mixing just until combined.
  5. Pour the batter into the prepared loaf pan and bake for about 50 minutes until golden brown.
  6. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
