Ingredients

  • 2 cups all-purpose flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • ¼ cup butter, softened
  • 2 large eggs
  • cups mashed ripe banana (about 3-4 ripe bananas)
  • cup sour cream or plain yogurt
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons brown sugar

Instructions

  1. Prepare a loaf pan by lining it with parchment paper and spraying it with cooking spray.
  2. Preheat the oven to 350°F.
  3. In a bowl, combine flour, baking soda, and salt.
  4. In a separate large bowl, beat together sugar and butter until well blended.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in mashed bananas, yogurt (or sour cream), and vanilla until blended.
  7. Gradually add the flour mixture, mixing until just moist.
  8. Pour the batter into the prepared loaf pan and sprinkle brown sugar on top.
  9. Bake for 1 hour or until a wooden pick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
