Instructions
- Preheat oven to 350°F (177°C) and position the rack to the lower third. Grease a 9×5-inch loaf pan. Whisk together flour, baking soda, salt, and cinnamon. Beat butter and sugar until creamy, then add eggs, yogurt, bananas, and vanilla. Combine wet and dry ingredients, fold in nuts if using. Pour batter into pan and bake for 60–65 minutes, covering with foil halfway through. Cool in pan for 1 hour, then on a wire rack.
