Ingredients

The batter

  • 2 cups mashed very ripe banana
  • ½ cup cane sugar or brown sugar
  • ½ cup melted butter or vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

The dry ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg

The mix-ins

  • ½ cup chopped walnuts
  • 2 tablespoons chopped walnuts for topping

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. In a large bowl, whisk together the mashed banana, sugar, melted butter, eggs, and vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  4. Add the dry ingredients to the wet ingredients and stir until just combined, being careful not to overmix.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared pan and top with additional walnuts.
  7. Bake for 50 to 60 minutes, checking for doneness with a toothpick.
